5 Ingredient Vietnamese Pizza (Bánh Tráng Nướng)

Non-Vietnamese folks won’t understand why it’s called a pizza, and some folks will say it’s more like a quesadilla! Either way, it’s super easy and filling, using just 5 ingredients. The great thing about rice paper is that it lasts forever in the pantry. This can be a snack or light meal, depending on how much egg or deli meat you add to a “pizza”; you can easily get ~12-24g of protein (2 eggs = 12g and 2 slices of ham = 12g.

ingredients

  • rice paper

  • eggs

  • deli meat, diced (I prefer ham)

  • spinach

  • chili oil

instructions

  1. Heat a large pan and add rice paper to the pan.

  2. Crack 1-2 eggs directly on top of the rice paper and, using a chopstick (or utensil of choice), whisk and evenly spread.

  3. Add diced deli, spinach, and chili oil on top of the egg.

  4. Fold and flip until both sides are crispy.

Notes:

  • You should eat this quickly, otherwise the rice paper will become soggy!
